I love waffles! It’s true! Pancakes are okay…but Waffles! Oh, they are are sooo good!

They are seriously one of my favorite breakfast foods!

And I went a whole year and a half without eating them when we first moved to the field. Can you believe it?!

But then, we went to live in Beijing for a couple of months to have our second baby, and to our amazement there was a restaurant that served waffles right down from the hospital!

And they were heavenly!

It was then that I realized I could not go on without waffles in my life! (I’m just being dramatic here ha!) I did however, realize that I had to start making these at home!

The only thing I was missing was a waffle iron, and well, they don’t sell those in store here.

So I kind of let go of the idea for a while.

Until, my awesome hubby found a nice one online and decided to purchase it for me for our anniversary this year!

I was soo excited!

Yes…it’s true people…we’ve reached that point in our marriage where I actually get giddy about receiving appliances as gifts!

I’ve been too busy to try it out since then, but this morning  I woke up and decided…Today’s the day! I’m making those waffles!

So, I sat down and looked over a few recipes…thought about what I wanted to do…and then put together my own recipe for some oh so delicious…real food friendly….chocolate chip waffles!

And they were sooo good!

Give them a try. I promise you won’t regret it!

‘Healthy’ Chocolate Chip Waffles

Ingredients:

  • 2 eggs
  • 1 ¾ cup milk
  • ¼ cup coconut oil (or melted butter)
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • ¼ teaspoon baking soda
  • 1 ½ cups whole-wheat flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • ¼ cup chocolate chips
  • Chopped pecans (just a handful)
  • Real Maple Syrup

Instructions:

  1. Preheat your waffle iron.
  2. Whisk together the eggs, milk, oil, honey, cinnamon, and baking soda in a large mixing bowl.
  3. In a separate bowl, sift together the flour, baking powder, and salt
  4. Then, add the dry ingredients to the liquid mixture.
  5. Whisk until smooth.
  6. Add in the chocolate chips and chopped pecans
  7. Grease your waffle iron with some melted butter and a basting brush.
  8. Then ladle enough batter onto the center of the iron to fill in all the cracks.
  9. Cook according to your waffle iron instructions. (Mine cook in about 4 minutes total)
  10.  Top with maple syrup or maybe some vanilla ice cream?? If you feel like it!

Waffles are super fun!
They can be sweet, savory, fruity, nutty…
You can make sandwiches out of them.
Or make a huge batch to store in the freezer for days when you just want to “pop” something in the toaster. (This recipe yields 5 to 6 waffles by the way!)
There’s so many possibilities!

These waffles are definitely for those mornings when you’re craving something sweet. But I can’t wait to try some other fun recipes!

If you don’t have a waffle maker, consider getting one! So much fun and such a money saver! These waffles were super inexpensive to make compared to how much they cost at a restaurant especially here in China! Waffles are not a cheap meal here!
